So on the recipe’s detail page, I am only displaying 5 ingredients in the scroller – how do I get it to show all of the ingredients?

The option to increase the no of ingredients in the scroller is provided by the plugin itself.
For this go to a particular recipe. In the bottom, you can see the “Ingredients Detail” tab. Just go there and increase the no in the field “No of Ingredients: ”

Yes, I am doing that. My recipe has about 11 ingredients. But on the recipe page, it is only scrolling 5 of them. I would like for it to scroll ALL of the ingredients since they are not listed anywhere else on the recipe page.
