In trying to use best practices of a silo structure off of my Category page, I optimized a description on each of the category pages and yet none visible on the page. Is there a setting option I overlooked?

Yes, the description of the category is currently not displayed in the category page. But we will definitely add it as the requested feature and will release the update soon by adding the feature.
