I am only seeing an option for a header image of 150×150. Is there a way to make a custom header image such as 950×200 or 1200×200, etc?

Hello @telapost,
The image you are referring to is not the header image but site Logo . The size of the logo is cannot be adjusted to the big image size as you have mentioned .
However if you want to place the header image in header you can definitely use the widget Header Right Widget Area . Here place the widget MP: Image and upload the image of your choice in the header.

When inspected your site we found that you remove the site title and tagline as well . If you do so then
Header Right Widget Area will also not work or will disappear. So you need to display the site title and tagline .As for the image you can upload the image of 728*90 px.
