I want the single most recent blog post to appear on the left hand widget so I chose my “Artcles” / Blog page as the About page. Unfortunately, it is showing all of my blog posts and not just the most current one. Is there an easy way to correct this?

Your queries are answered below:
In Home / Front / Review Section if you select your about page as blog as shown here http://prnt.sc/a99jvf
and in Admin Panel -> Appearance -> Customize -> Static Front Page. In this section if you have set front page as a static page and post page as the same page you have set in Home / Front / Review Section as shown here http://prnt.sc/a99k4e then it will display the latest post in that left widget area of the Home / Front / Review Section
If you have chosen different about page in Home / Front / Review Section from static page section , then Home / Front / Review Section about page will display the content of that particular page you have chosen as about page in Home / Front / Review Section.
So, if you want to display the content of particular page you choose as about page in Home / Front / Review Section then post page in static front page section should be different and if you want to display recent blog post then the post page in static front page section and about page in Home / Front / Review Section should be same.Best Regards!!!
I have done exactly as you said here but instead of bringing only the single most recent post to the front page, it is serving up *three* posts from that page — which is too many for the front page.
