The header will adjust the height according to the image height so once use the image of smaller height.

Regarding your query, the header image only shows up on the other pages than the home page.
Once please go through the child theme generator instruction and follow the process as mentioned above so that you can display the header image on the front page.
Also, make sure you upload the header image in section following the path Admin Panel > Appearance > Customize > Header Image.

To edit the demo content, you can activate the ‘One Click Demo Import’ plugin which is recommended by the theme itself.
It can be imported using one-click demo import plugin. You can import the demo content directly.
Import demo data following the path Appearance > Import Demo Data.
You can click the ‘import demo data’ to get the template as the demo.

Query 1. How to send a pdf invoice attached to the client booking email. I think it would be more transparent for the client if he accesses the invoice before payment. Especially when the bank transfer payment is used.

When we inspected your site, we found that choosing pax in a child is not working as the CSS of the theme is causing the issue. Regarding the issue, we will inform the theme author and release the update fixing the issue.
For now, you can add CSS following the path Admin Panel > Appearance > Customize > Additional CSS,
