How do I turn these off? When I turn them off in the customize area, the date disappears on the site but not the author, then when I reload the site again the dates are back.

You can hide authors and published dates in blog page from customize section.For detail assistance, please refer to below given link:

Hello, Thanks for the reply and the update today, but I’m still seeing the authors on the page even though I’m hiding it on the blog/archive page.
Is there a way to take them out of the header area also?

You can remove authors on page by adding custom CSS in Additional CSS section.
Please add following given CSS in Additional CSS section by going to Admin Panel > Appearance > Customize > Additional CSS
.byline, .author{ display: none; }Hope this helps.
