Hi, in the “About us” section there is a “Quote” option, but how can I add a quote for each language I have the site in? (English, Spanish and German) I am using the plug-in Polylang.

Actually, there is no quote section in the Travel Insight Pro theme.
So can you please explain which section you are referring to?
If the section you trying to set up can be set using the post, the page then you can create the page,post in different languages and select those post type according to your site language from the customizer.

Yes, there is a quote section in the “About us” template, please read carefully my previous comment, there is even a link to your own instruction manual:

About your response, I really don’t understand what you mean.
Maybe this will help you:
In the “Contact us” template, there is a widget area and I add widgets for each language easily. In the “About us” template, I have to input the Quote directly in the customiser page, so I CANNOT choose different languages.
