To make the site title appear below the menu please add below given CSS by going to Admin Panel > Appearance > Customize > Additional CSS.

flex-wrap: wrap; 
flex-direction: 
column-reverse; 
}

Now the slider in the theme can be set using the page, post, category, image and tags. If you chose the image then you have to add the custom text from the customizer it self. but if you chose to use the page and post and category, you have to go to the individual post edit screen and change the text as per your requirement.

Response: The blog page will display the title of the page that you have chosen in the option “Posts page” by going to Admin Panel > Appearance > Customize > Homepage Settings.

So whatever text you want to display in header, create the page with that title and chose that page in the option “Posts Page”.

#Query 2:

Response: To remove the “uncategorized” as you wish please add below-given CSS by going to Admin Panel > Appearance > Customize > Additional CSS.

}

The button will direct you to the page that you have chosen in the slider but to direct the slider as per your requirement requires higher code customization.
