Sorry for the inconvenience about the documentation of the theme.
As there was some minor changes in the theme’s documentation as per the latest version of the theme.The line that your were referring has been changed to below:
Further you might refer the updated documentation.After this you would be able see a pop-up box appear, click Theme Defined tab on left hand-side. And then you will be able to see Prebuilt Layout For Home page as Home.

KeymasterCurrently demo content is not available for the theme. But here is a supporting documentation of the theme that would give you a brief walk-through on how to setup your homepage as per demo and other available customization options.

KeymasterMake sure you have upgraded your theme to the latest version 2.1.6 where after installation those issue should be addressed.
If still those issues exits, then :
1. try deactivating the plugins one by one to crosscheck them.
2. try removing custom CSS if they exist.If none of these are working then please share us your site URL so that we will try debugging it through the browser source code.

Keymaster@coachbb94, you feedback regarding the menu on current context is very much appreciating to us. Your thought is valuable and probably our users would get the optional setting to switch between these menu type in near future updates as already been enlisted.

Next, regarding the tagline display with site logo is quite working fine as again tested and verified in current version. You can refer to the screenshot below.

That is theme is working fine. Let us know if you have any confusion on it.

As much as we would love to help you on your request, but this feature is not in core. Also this is not a quick fix and therefore needs additional customization. In fact, it is the theme feature of displaying the menu feature in a extraordinary way as shown in its demo here. This feature could be available in future updates. Alternatively, you can consider Hiring a Customizer if you want.
I would like to have a tagline display below the site logo. How do I add the tagline?
Well, to add the tagline below the logo browser Appearance -> Customize -> Site Identity there you would see the “Tagline” field to input your text.

KeymasterIf you use an image less than the recommended size then it tends to stretch to fit to the fullwidth. It effects on the pixel resolution of the image so reduce the picture quality.
Therefore you need to choose quite bigger image approx to the recommended image size .

The php error you are facing in the home page may have been caused by theme / plugin conflicts and / or error in WordPress Configurations. Please try to follow the following further steps to debug the root cause for your issues:
- Deactivate Your Plugins : Deactivate All of your plugins first and see if the issue is resolved. If the issue is resolved you can try reactivating plugins one by one and check the site to find the plugin creating the error.
- Switch to default theme : Issues can also be caused by the theme/ plugin functions conflicts. Please try to switch back to a default theme (Like Twentysixteen) and check the home page.
- Manual WordPress Update: If the above steps does not resolve your issues you can also try MANUALLY updating. Download a fresh copy of the WordPress .zip file to your computer, unzip it, and use that to copy up all files and folders EXCEPT the wp-config.php file and the /wp-content/ directory. You may need to delete the old wp-admin and wp-includes folders and files on your server before uploading the new ones. Please read the Manual Update directions first.
Note: Please make sure to backup everything (including your database) before doing any actions, just in case something really goes wrong.

Ok, to increase height of the header image in mobile version try adding below Custom CSS.

As far as we have inspected your site we see that Contact From 7 plugin is not activated.
In you site the shortcode text is seen due to absence of Contact Form 7 plugin.
So for those shortcode to be displayed as contact form as shown in the demo you need to download the Contact From 7 plugin from herehttps://wordpress.org/plugins/contact-form-7/
And the after that you need to activate that plugin.

We have inspected your website and currently it is not running Onefold theme. Firstly, you will need to activate “Onefold” theme from Admin Dashboard > Appearance > Themes > Onefold > Activate.
Regarding your question on Onefold theme, you can surely set a static front page as your home page in the theme. If you do not want to display the homepage sections you can disable theme by going to your Admin Dashboard > Appearance > Customize > Homepage Sections > Manage Sections and uncheck the sections you want to remove.
Also, for the full width layout you will need to go to Admin Dashboard > Appearance > Customize > Theme Options > layout Options > Global Layout and select “No Sidebar” option.

Width of the slider image you are using is small than recommended.
The recommended slider image dimension is 1420px X 550px.

KeymasterCurrently your main site URL appears blank , white screen of death.
Option I :
Try to disable any plugins and see if they are causing any issue
Option II :
Go to the root of your WordPress installation usually it is inside /public_html folder in your cPanel.
In the root folder there is a file called wp-config.php and edit it to change the WP_DEBUG mode to TRUE .
i.e.
define( 'WP_DEBUG', false );change it todefine( 'WP_DEBUG', true );This will reveal any PHP error in the browser that is preventing the homepage display.
